First time making pancakes from scratch--successfully.

Behold, homemade chocolate chip pancakes with maple syrup and bananas!

I only tried making pancakes from scratch once before.  I've been meaning to try Reggie's Rule-of-1 pancakes for a while, and I finally did this morning.  Results: decidedly superior to the store-bought mix (even TJ's!).  I actually didn't use a whole egg, but rather all egg whites, because I had them left over from the eggnog I made.  And I 1.5x'd the recipe.  Other than that--no changes.

The texture was perfectly fluffy but the pancakes had a sort of bland taste... I wonder if using buttermilk or even just adding a bit of salt would make any difference in flavor.

that's some fine-lookin' pancakes.
now...take it to the next level, caramelized those bananas in sugar and give them a dash of rum and light them on fire (don't worry, fire will cease once the alcohol is all burnt)...and then add a scoop of ice cream, you will have a breakfast-turned-dessert!
i noticed you served the pancakes on your new (maybe not so new anymore) plates! looks great! it makes me want to consider replacing my boring $1 white Ikea plates when i get back

my plan has been to upgrade the kitchen with some investment-quality housewares (new set of pots, plates, steak knife, drinking glasses), but realistically we'll likely be feeling the pinch after spending so much on this trip. need to get a job!!!
those look fantastic! definitely would recommend trying a buttermilk recipe, although it alters the chemistry so you have to adjust your old one, or use a recipe with buttermilk in it. great job steph!
